Blue cheese burger
½ small, finely diced
Extra lean beef mince (5% fat), raw
Egg, whole, raw
1 medium, raw, lightly beaten

- In a small bowl, mix the onion, mince and egg until combined. Add 25g Stilton and mix gently to combine. Shape the mixture into 4 patties about 2cm thick.
- Mist a griddle pan with cooking spray and put over a medium heat. Cook the burgers for 15 minutes, turning occasionally, until cooked through.
- Crumble another 25g Stilton over the burgers for the final 2 minutes of cooking time. Serve each burger on a toasted rye sandwich thin with spinach leaves, sliced apple and sliced red onion.
