Blood oranges have a very short season in late winter, so make the most of them with these refreshing jellies.

Ingredients

Gelatine

2 sachet(s), powdered

Tropicana Pure Premium Sanguinello

1000 ml

Orange

4 medium, (blood oranges)

Mint, Fresh

4 sprig(s)

Instructions

  1. Put the powdered gelatine into a small heatproof bowl. Add 6 tablespoons of the orange juice drink and leave to swell for 2 - 3 minutes. Place the bowl over a saucepan of simmering water (do not let the water touch the bowl) and leave to dissolve for about 4 - 5 minutes. Cool slightly.
  2. Peel the blood oranges, removing all the pith. Slice into segments, removing all the membrane. Slice the tops and bottoms from the oranges then, using a sharp, serrated knife, slice away the peel and pith. Hold the fruit over a bowl to catch the drips and slice away the segments, leaving the membrane behind. Place half the segments in the base of 4 serving glasses.
  3. Pour the remaining orange juice into a large jug and stir the dissolved gelatine liquid into the remaining orange juice drink. Pour the mixture into the glasses, then transfer to the refrigerator to set. This will take about 2 hours.
  4. Finish off the jellies with the remaining orange segments. Serve, decorated with mint leaves.

Notes

When blood oranges are out of season, use ordinary oranges instead.
