Ingredients

Demerara Sugar

2 teaspoons, level

Mint, Fresh

4 sprig(s), leaves picked, plus extra to garnish

Blackberries

100 g

Vodka

75 ml

Low Calorie Tonic Water

4 glass(es), small

Lime(s)

1 medium, cut into wedges, to serve

Instructions

  1. Put the demerara sugar and a handful of fresh mint leaves in a small jug and muddle using a cocktail muddler. If you don’t have one, use the end of a rolling pin or the back of a spoon.
  2. Add the blackberries and crush just a little. Pour over the vodka and stir. Half-fill 4 tumblers with ice cubes and spoon over the fruit and vodka mixture. Top with low calorie tonic water and serve garnished with lime wedges and extra mint leaves.
