- Put the demerara sugar and a handful of fresh mint leaves in a small jug and muddle using a cocktail muddler. If you don’t have one, use the end of a rolling pin or the back of a spoon.
- Add the blackberries and crush just a little. Pour over the vodka and stir. Half-fill 4 tumblers with ice cubes and spoon over the fruit and vodka mixture. Top with low calorie tonic water and serve garnished with lime wedges and extra mint leaves.
