So fresh, so filling. This flavour-packed vegan sandwich can take the heat: Add a pinch of cayenne or a few dashes of hot sauce to the mixture before puréeing.

Ingredients

Black beans in water

1 can(s), large, drained

Lemon Juice, Fresh

2 tablespoon(s)

Garlic

1 clove(s)

Olive Oil

1 tablespoon(s)

Ground Cumin

1 teaspoon(s), level

Avocado

½ medium

Roasted red peppers in brine, drained

190 g, drained weight

Spinach

30 g

Cucumber

½ individual, medium

Instructions

  1. In a food processor, purée the beans, lemon juice, garlic, oil and cumin until smooth, season with salt and pepper.
  2. In a small bowl, mash the avocado until smooth. Then spread over 4 slices of the toast.
  3. Spread a quarter of the bean mixture over the other 4 slices of toast, top evenly with the sliced peppers, spinach and cucumber.
  4. Top with the avocado toast slices, cut in half and serve.

Notes
