Baked sweet potato crisps

Sweet potato(es), raw
- Preheat the oven to 200°C, fan 180°C, gas mark 6 and line two large baking trays with baking paper.
- Slice the sweet potatoes into 2mm thick rounds and put in a large bowl. Drizzle over the olive oil, season to taste and toss to combine.
- Spread out the sweet potato crisps on the prepared baking trays in single layers.
- Bake for 18-20 minutes or until crisp. Allow to cool, then serve.
