'Back of the fridge' eggs
Chop whatever vegetables you have lurking at the back of the fridge and use in this quick and easy scramble.
Calorie controlled cooking spray
Peppers, all types
4 individual, sliced
½ small, finely chopped
Egg, whole, raw
2 medium, raw, beaten
- Sauté the chopped veg over a medium heat in a frying pan misted with cooking spray, until browned.
- Add the eggs, season to taste and cook, stirring, until scrambled – for about 2 mins. Top with some fresh basil, if you like.
