Aubergine, tomato & Parmesan bake

- Preheat the grill. Arrange the aubergine slices on a baking sheet and mist them with cooking spray. Grill for 2-3 minutes on each side, until softened.
- Preheat the oven to 190°C, fan 170°C, Gas Mark 5.
- Rub the cut garlic clove around the insides of 2 gratin dishes (or use 1 larger dish). Spoon half the pasta sauce into the base of the dishes, or dish. Arrange the aubergine slices on top, season, then spoon the rest of the pasta sauce over them. Sprinkle 1 tablespoon of breadcrumbs and 1 tablespoon of Parmesan cheese evenly over the surface of each dish.
- Bake in the oven for 20-25 minutes, until golden brown and bubbling.
