Asparagus with Parma ham and balsamic dressing

Asparagus is a seasonal treat, so make the most of it with this elegant dish! It's perfect for as a starter or light meal.

Ingredients

Asparagus, raw

600 g, medium or thick

Calorie controlled cooking spray

5 spray(s)

Black pepper

Parma Ham

80 g, thinly sliced

Rocket

1 portion(s), leaves (handful) or watercress

Vinegar, All Types

2 teaspoons, balsamic

Dried Basil

1 teaspoons, level, leaves, to garnish

Instructions

  1. Preheat a chargrill pan or grill and spray with low fat cooking spray. Season the asparagus spears with a little black pepper, then chargrill or grill them until they start to soften, turning them from time to time.
  2. Tear the slices of Parma ham in half, then wrap the pieces around the warm asparagus spears. Serve them on top of the rocket or watercress, sprinkle a little balsamic vinegar over them, then garnish with a few basil leaves.

Notes

Trim the woody ends from the asparagus before you start, if necessary.
