Ingredients

Rice Wine Vinegar

2 tablespoons

Caster Sugar

2 teaspoons

Salt

1 teaspoons, sea

Root Ginger

1 tablespoons, finely chopped

Cucumber

1 individual, thinly sliced

Radish

6 medium, thinly sliced

Mint, Fresh

2 tablespoons, chopped

Instructions

  1. Bring 2 tablespoons rice wine vinegar, 2 teaspoons caster sugar, 1 teaspoon sea salt and 1 tablespoon finely chopped fresh ginger to a simmer in a small pan over a low heat. Gently cook until the sugar has dissolved, then set aside to cool.
  2. Put 1 thinly sliced cucumber, 6 trimmed and thinly sliced radishes and 2 tablespoons chopped fresh mint in a serving bowl and toss through the dressing. Let stand for 10 minutes, then serve.
