Asian-style cucumber salad
Rice Wine Vinegar
1 teaspoon(s), sea
1 tablespoon(s), finely chopped
1 individual, extra large, thinly sliced
6 medium, thinly sliced
2 tablespoon(s), chopped
- Bring 2 tablespoons rice wine vinegar, 2 teaspoons caster sugar, 1 teaspoon sea salt and 1 tablespoon finely chopped fresh ginger to a simmer in a small pan over a low heat. Gently cook until the sugar has dissolved, then set aside to cool.
- Put 1 thinly sliced cucumber, 6 trimmed and thinly sliced radishes and 2 tablespoons chopped fresh mint in a serving bowl and toss through the dressing. Let stand for 10 minutes, then serve.
