Creamy, sweet and crunchy, this extra-special porridge is a real winner
½ individual, seeds scraped
1 medium, skin left on and grated
- Combine the oats, milk, vanilla seeds and 450ml water in a large pan over a medium heat and bring to a simmer. Cook, stirring occasionally, for 3 minutes or until the oats are tender and creamy.
- Stir in the apple, then remove from the heat and set aside to thicken slightly.
- Meanwhile, dry fry the nuts and seeds over a medium heat for 3 minutes, stirring often, until fragrant and toasted.
- Serve the porridge topped with the pecans, pumpkin seeds and maple syrup.
Use ½ tsp ground cinnamon in place of the maple syrup, if you like.
