Apple
1 medium, cored and cut into matchsticks
Kale, raw
60 g, shredded
Cabbage
160 g, shredded
Carrots, raw
1 medium, grated
Parsley, fresh
10 g, chopped
Red onion
¼ small, thinly sliced
Instructions

Toast the sunflower and pumpkin seeds in a dry frying pan over a medium heat for 2-3 minutes until fragrant. Remove from the heat and set aside to cool.

In a large bowl, combine the vinegar, oil, lemon juice and mustard. Core and slice the apple and cut into matchsticks, then add to the bowl along with the shredded kale, cabbage, carrot, parsley and red onion.

Add the toasted seeds to the bowl, season to taste and toss everything together until evenly coated in the dressing.
