Filo Pastry
4 sheet(s), large
Pickled gherkins, no added sugar
4 medium, drained, large gherkins - sliced in half
Light Mozzarella
80 g
0% fat natural Greek yogurt
100 g
Lemon Juice, Fresh
2 tablespoon(s)
Paprika
2 pinch

Preheat an air fryer, if necessary, to 180°C.

Place a sheet of pastry on the work surface, then arrange two gherkin slices horizontally on the pastry and top with 20g mozzarella. Fold the sides of the pastry towards the centre to seal the edges, then fold the bottom of the pastry over the filling, then roll to seal the wrapper around the filling. Repeat with the remaining pastry.

Coat the rolls with cooking spray. Arrange in an air fryer basket coated with cooking spray. Air-fry until browned and crisped, about 8 minutes, turning halfway through.

Meanwhile, in a small bowl stir together the yogurt, lemon juice and paprika. Serve the sauce with the rolls.
