Ingredients
Plantain, Raw
2 medium, peeled and sliced into ovals
Paprika
¼ teaspoon(s), level
Calorie controlled cooking spray

Garlic
2 clove(s), crushed
Red onion
1 small, finely sliced
Spring Onions
4 medium, trimmed and sliced
Red pepper
1 medium, deseeded and finely sliced
Yellow pepper
1 medium, deseeded and finely sliced
Chilli, green or red
1 individual, Scotch bonnet, finely chopped
Thyme, Fresh
3 sprig(s)
Ackees in brine, tinned & drained
500 g, drained
Spring greens
150 g, cooked to pack instructions

Preheat the oven to 180°C, place the plantains onto a baking tray and sprinkle with the paprika and a pinch of salt. Mist with cooking spray and mix through. Cook for 20-25 minutes.

Meanwhile, place a frying pan over medium heat and mist with cooking spray. Add the garlic, onion and peppers and cook until the peppers are softened. Season with salt and pepper, and add the fresh thyme and scotch bonnet chilli.

Once the peppers are softened, add the drained ackee to the pan. Fold gently to mix through. Serve with the cooked spring greens and the baked plantain.
