3-ingredient peanut butter cookies
No flour? No problem. All you need is a few kitchen staples to make these irresistibly soft and chewy biscuits
Crunchy Peanut Butter
Golden Caster Sugar
Egg, whole, raw
1 medium, raw
- In a large bowl, mix together the peanut butter, caster sugar and egg until well combined. Place the bowl in the fridge and allow to chill for 1 hour.
- Preheat the oven to 200°C, fan 180°C, gas mark 6. Line 2 baking trays with baking paper. Roll the dough into 25 balls and place onto the baking trays. Use a fork to lightly flatten them, first in one direction and then the other, to create a crisscross pattern on top of each one.
- Place in the oven and bake for 10-12 minutes, until golden and firm. Transfer to a wire rack and leave to cool before eating.
You can freeze the cookies in an airtight container or bag for up to 3 months
