These muffins are so delicious, you won’t believe that they’re packed with heaps of fruit and veggies.

Ingredients

Plain wholemeal flour

1 cup(s), (160g)

Ground cinnamon

2 tsp

Bicarbonate of soda

2 tsp

Baking powder

1½ tsp

Oat bran

1 cup(s), (120g)

Brown sugar

1 cup(s), (220g)

Canola oil

¼ cup(s), (60ml)

Apple sauce

150 ml, (1/2 cup)unsweetened

Natural essence

1 tsp, vanilla

Green apple, unpeeled

1 medium, peeled, grated

Zucchini

1 small, grated

Carrot(s)

1 small, peeled, grated

Sultanas

¼ tbs, (40g)

Instructions

  1. Preheat oven to 180°C or 160°C fan-forced. Line 18 (⅓-cup/80ml capacity) muffin tin holes with paper cases.
  2. Sift flour, cinnamon, bicarbonate of soda, baking powder and salt into a large mixing bowl. Tip husks from wholemeal flour into bowl. Stir in oat bran and brown sugar and make a well in the centre.
  3. Whisk oil, apple puree, vanilla and ¼ cup (60ml) water in a jug. Pour into well in flour mixture with apple, zucchini, carrot and sultanas and stir until just combined (do not over-mix).
  4. Spoon mixture into paper cases. Bake for 18–20 minutes or until cooked when tested with a skewer. Set aside muffins in tins for 5 minutes before turning out onto a wire rack to cool. Serve.

Notes

Store in an airtight container for up to 2 days or freeze for up to 1 month.
