Ingredients

Reduced fat oil spread

1 tbs

Pear(s)

3 small, Corella pears, unpeeled, quartered, cored

Maple syrup

1 tbs

Ground ginger

½ tsp

No added sugar orange juice

2 tbs

Crepe

3 individual, (150g), frozen gluten-free crepes, thawed

Instructions

  1. Heat spread in a large non-stick frying pan (22cm base measurement) over medium-high heat. Cook pears, turning, for 3–4 minutes or until just tender. Add maple syrup and ginger and cook, turning pears, for 1 minute or until coated.
  2. Add juice and cook, turning pears occasionally, for 2 minutes or until pears are tender and sauce has slightly thickened.
  3. Reduce heat to low. Arrange pears, skin-side up, in a circle in pan. Top with 1 crepe. Brush crepe with some of the sauce from the pan. Top with another crepe and a little more sauce. Repeat with remaining crepe.
  4. Cook, covered, for 2 minutes or until crepes are heated through. Drizzle with sauce to serve.

Notes

SERVING SUGGESTION: No-fat no-added-sugar vanilla yoghurt. TIPS: To serve, cut crepe topping into quarters and use a spatula to lift portions onto serving plate. Store any leftovers in an airtight container in the fridge for up to 3 days. Reheat in the microwave.
