Slices of zucchini are layered in a muffin pan with marinara sauce, turkey pepperoni, and mozzarella cheese then baked till the zucchini is tender and the cheese is gooey. You can enjoy it as a main course, a side, or an appetizer.

No sugar added fat free marinara sauce

Instructions

  1. Preheat the oven to 425°F. Coat a 12-cup muffin pan with cooking spray.
  2. Into each muffin cup, layer 1 zucchini slice, 1 tsp marinara, 1 pepperoni slice, and 1 tsp cheese. Repeat the layers one more time. Top with 1 zucchini slice, 1 tsp marinara, and 1 tsp cheese. Bake until the cheese is melted and browned, 18 to 20 minutes. Cool for a few minutes, then lift the zucchini stacks out of the pan with an offset spatula.
