If you're looking for crunch, skip the potato chips and go for these delightful, golden, crispy little bites! Satisfy your crunchy cravings with the help of our Natural Light String Cheese, panko breadcrumbs and one of our favorite vegetables. This easy recipe takes just 25 minutes total and is great for an appetizer, party side dish, or WW-approved snack.

Ingredients

Uncooked zucchini

1 medium, about 9 ounces

Egg(s)

WW Light part-skim mozzarella string cheese

2 stick(s)

Panko breadcrumbs

¼ cup(s)

Table salt

¼ tsp

Black pepper

¼ tsp

Paprika

¼ tsp, sweet

Instructions

  1. Preheat oven to 425°F. Coat a large baking sheet with non-stick cooking spray.
  2. Slice zucchini into ¼-inch thick rounds. In a small bowl whisk the egg. In a separate shallow dish combine the grated string cheese with the panko breadcrumbs, salt, pepper, and paprika. Dip each zucchini round into the egg, then into the cheese-panko mixture, pressing to coat evenly on both sides and transfer to prepared baking sheet.
  3. Bake the zucchini chips until golden and crisp, about 15 minutes. Remove with a spatula. Serve immediately.
