Zucchini and Pine Nut Pancakes

Zucchini is plentiful in the late summer months. So get out that grater and prepare these tender, tasty "pancakes" - a welcome addition to any dinner table.
uncooked zucchini2 medium, coarsely grated
uncooked onion(s)½ small, coarsely grated
dried plain breadcrumbs⅓ cup(s)
grated Parmesan cheese2 Tbsp
pine nuts2 Tbsp, finely chopped
egg white(s)1 large
table salt⅛ tsp, or to taste
black pepper⅛ tsp, or to taste
- Stir together all ingredients; mix well.
- Coat a large nonstick skillet with cooking spray and set it over medium heat. Spoon batter into skillet to form 3-inch pancakes. Fry on each side until golden, about 3 minutes per side. Repeat with remaining batter. Yields 2 pancakes per serving.
