Zucchini and Pine Nut Pancakes

Zucchini is plentiful in the late summer months. So get out that grater and prepare these tender, tasty "pancakes" - a welcome addition to any dinner table.


Ingredients
Uncooked zucchini
2 medium, coarsely grated
Onion
½ small, coarsely grated
Dried plain breadcrumbs
⅓ cup(s)
Grated Parmesan cheese
2 Tbsp
Pine nuts (unsalted, raw or dry roasted, no sugar added)
2 Tbsp, finely chopped
Egg
1 large egg(s)
Egg whites
1 large
Table salt
⅛ tsp, or to taste
Black pepper
⅛ tsp, or to taste
Instructions

Stir together all ingredients; mix well.

Coat a large nonstick skillet with cooking spray and set it over medium heat. Spoon batter into skillet to form 3-inch pancakes. Fry on each side until golden, about 3 minutes per side. Repeat with remaining batter. Yields 2 pancakes per serving.
