White-frosted cupcakes

There's a creamy, sweet surprise in each one of these chocolaty cupcakes. We used a boxed cake mix to streamline the ingredient list and finished them off with a super-easy, two-ingredient frosting.


Ingredients
Unprepared packaged devil's food cake
15¼ oz
Water
1 cup(s)
Unsweetened applesauce
½ cup(s)
Egg
3 large egg(s)
Low fat cream cheese
7 oz, at room temperature, divided
Vanilla extract
1 tsp
Powdered sugar (confectioner's)
4 Tbsp
Instructions

Preheat oven to 350°F. Line 24 cupcake cups with paper liners or coat with cooking spray.

Beat cake mix, water, applesauce and eggs together for 2 minutes at medium speed. Pour batter into prepared muffin pans.

Stir together 3 oz cream cheese and vanilla. Drop a spoonful of the mixture into center of each cupcake. Bake until firm, 19 to 22 minutes. Cool completely before icing.

For icing, stir together remaining 4 oz cream cheese and powdered sugar. Do not stir too vigorously or it will become too soft to spread. Divide icing among cupcakes and spread to cover tops.
