Some viral recipes end up requiring a lot of effort for an anti-climactic finished dish. This one is the opposite: almost no effort and a this-shouldn't-be-this-delicious result. Our WW-ified version of this cheesy snack all over social media is just as tasty as the original. Secret ingredient? ZeroPoint hero, nonfat cottage cheese, which echoes the creaminess of the brie while lowering Points. Feel free to garnish however you'd like. We chose black pepper and thyme but lemon zest and chives would also work. Or try drizzling this concoction over roasted veggies. It's un-brie-lievable! (Sorry.)

Ingredients

Brie cheese

8 oz, cold

Fat free cottage cheese

cup(s)

Kosher salt

1 pinch(es)

Black pepper

1 pinch(es)

Fresh thyme

½ tsp, optional

Fresh vegetable sticks

4 cup(s)

Instructions

  1. With a serrate knife, trim the rind off of the brie and discard. Cut the brie into cubes and let stand at room temperature until softened, about 10 to 15 minutes.
  2. In a food processor, combine the softened brie, cottage cheese, and salt. Process until smooth, stopping and scraping sides occasionally.
  3. Spread onto a shallow dish and garnish with the black pepper and thyme, if using. Serve with the veggies.
  4. Serving size: about 2 tbsp
