Wheat berries are whole, unprocessed wheat kernels that add wonderful crunch and flavor to any salad.

Uncooked wheat berries

Instructions

  1. Bring the water to a boil in a medium saucepan. Stir in the wheat berries; reduce the heat and simmer, covered, until the berries are tender and the water is absorbed, 1 1/2–2 hours. Fluff the wheat berries with a fork, then let stand 5 minutes.
  2. Combine the wheat berries with the smoked turkey, nectarines, apple, and onion in a large bowl. Whisk together the orange juice, vinegar, mustard, and honey in a small bowl. Stir the juice mixture into the wheat berry mixture until blended.
  3. Arrange the spinach on a platter. Spoon the wheat berries–turkey mixture on top. Serve at once.

Notes

If you’re pressed for time, substitute bulgur wheat (it cooks in about 25 minutes), for the wheat berries.
