- Cut the watermelon into 3/4-inch chunks.
- Combine the watermelon, cucumber, scallion, vinegar, and salt in a serving bowl; let stand about 10 minutes. Sprinkle with the feta cheese and serve at once. Yields 1 generous cup per serving.
