Feta is a type of curd cheese that has been produced in Greece for thousands of years.

Ingredients

fresh watermelon

2 pound(s), rind removed

cucumber(s)

1 medium, peeled and thinly sliced

uncooked scallion(s)

1 medium, thinly sliced

red wine vinegar

3 Tbsp

table salt

¼ tsp

reduced-fat feta cheese

¼ cup(s), crumbled

Instructions

  1. Cut the watermelon into 3⁄4-inch chunks.
  2. Combine the watermelon, cucumber, scallion, vinegar, and salt in a serving bowl; let stand about 10 minutes. Sprinkle with the feta cheese and serve at once. Yields 1 generous cup per serving.

Notes

Traditionally it is made with goat’s or sheep’s milk, but it can also be made with cow’s milk. Feta is salted and cured in a brine solution for at least 3 months. Its flavor ranges from mild to sharp, and it can be soft to semifirm. Greek feta is probably most well known, but Bulgaria and France also produce fine examples.
