Ingredients

fresh lime juice

uncooked red onion(s)

1 Tbsp, chopped

extra virgin olive oil

agave nectar

½ tsp

table salt

black pepper

1 pinch

fresh watermelon

1 cup(s), seedless, chunks

cucumber(s)

1 cup(s), chunks

crumbled feta cheese

2 Tbsp

fresh mint leaves

1 Tbsp, chopped

Instructions

  1. Combine lime juice, onion, oil, agave, salt and pepper in a small bowl; let rest at room temperature for 10-15 minutes.
  2. Thread watermelon and cucumber evenly across four 6-inch skewers and drizzle with onion-lime mixture; sprinkle with feta and mint.
  3. Serving size: 1 skewer
