These skewers are an excellent side dish with grilled chicken or fish, and you can scale up the recipe for a crowd. In place of agave nectar, you can use honey or granulated sugar—just stir the sugar until it dissolves.

Ingredients

Fresh lime juice

2 Tbsp

Uncooked red onion(s)

1 Tbsp, chopped

Extra virgin olive oil

1 tsp

Agave nectar

½ tsp

Table salt

1 pinch(es)

Black pepper

1 pinch(es)

Fresh watermelon

1 cup(s), seedless, (1-inch) chunks

Cucumber(s)

1 cup(s), (1-inch) chunks

Crumbled feta cheese

2 Tbsp

Fresh mint leaves

1 Tbsp, chopped

Instructions

  1. In small bowl, combine lime juice, onion, oil, agave, salt, and black pepper. Let sit at room temperature for 10 to 15 minutes.
  2. Alternately thread watermelon and cucumber onto 4 (6-inch) skewers. Drizzle with onion-lime dressing and sprinkle with feta and mint.
  3. Serving size: 1 skewer
