Watermelon Caprese Salad

This twist on the classic summer salad takes caprese to a whole new place. Swapping out the traditional sliced tomatoes for watermelon makes the salad fresh, crisp, juicy, and supremely refreshing. We keep the fresh mozzarella and basil for some familiar touchpoints, and top everything off with a drizzle of store-bought balsamic glaze. We cut the watermelon into square slices about a half-inch thick; you can cut triangles, circles, or whatever shape suits you. You’ll need about one-third to one-half of a personal-sized watermelon for this recipe.

Fresh mozzarella cheese
4 oz, cut into 8 slices
Store-bought balsamic glaze
2 Tbsp, thinly sliced
- Arrange the watermelon and cheese in a single layer on a cutting board or work surface; sprinkle evenly with salt. Arrange the watermelon and cheese slices alternately on a platter; sprinkle with pepper. Drizzle balsamic glaze over the top, and sprinkle with basil.
