Warm Cherry Tomato, Goat Cheese and Pasta Salad

Any small tomatoes will work in this easy salad: cherry, grape, yellow, red, black—whatever looks good at your market.
uncooked whole wheat penne6 oz
fresh cherry tomato(es)1 pound(s), halved
basil¼ cup(s), loosely packed, finely chopped
fresh parsley2 Tbsp, loosely packed, finely chopped
olive oil1 Tbsp
minced garlic1 tsp
table salt½ tsp
black pepper½ tsp
semisoft goat cheese1 ½ oz, crumbled
- 1. Bring a large saucepan of water to a boil over high heat. Add pasta and cook, stirring occasionally, until al dente, about 7 minutes or according to the package directions.
- 2. In a large bowl, toss together tomatoes, basil, parsley, oil, garlic, salt and pepper.
- 3. Drain pasta (do not rinse!) and add it hot to the tomato mixture. Toss well and sprinkle with goat cheese.
- Serving size: 1 1/2 cups.
