Warm Cherry Tomato, Goat Cheese and Pasta Salad

Any small tomatoes will work in this easy salad: cherry, grape, yellow, red, black—whatever looks good at your market.

Ingredients

uncooked whole wheat penne

6 oz

fresh cherry tomato(es)

1 pound(s), halved

basil

¼ cup(s), loosely packed, finely chopped

fresh parsley

2 Tbsp, loosely packed, finely chopped

olive oil

1 Tbsp

minced garlic

1 tsp

table salt

½ tsp

black pepper

½ tsp

semisoft goat cheese

1½ oz, crumbled

Instructions

  1. 1. Bring a large saucepan of water to a boil over high heat. Add pasta and cook, stirring occasionally, until al dente, about 7 minutes or according to the package directions.
  2. 2. In a large bowl, toss together tomatoes, basil, parsley, oil, garlic, salt and pepper.
  3. 3. Drain pasta (do not rinse!) and add it hot to the tomato mixture. Toss well and sprinkle with goat cheese.
  4. Serving size: 1 1/2 cups.
