Warm cherry tomato, goat cheese, and pasta salad
Uncooked whole wheat penne
Fresh cherry tomato(es)
1 pound(s), halved
¼ cup(s), loosely packed, finely chopped
2 Tbsp, loosely packed, finely chopped
Semisoft goat cheese
1½ oz, crumbled
- Bring a large saucepan of water to a boil over high heat. Add pasta and cook, stirring occasionally, until al dente, about 7 minutes or according to the package directions.
- In a large bowl, toss together tomatoes, basil, parsley, oil, garlic, salt and pepper.
- Drain pasta (do not rinse!) and add it hot to the tomato mixture. Toss well and sprinkle with goat cheese.
- Serving size: 1 1/2 cups.
