Instructions

  1. Preheat oven to 350°F. Lightly coat a 6-cup muffin pan with cooking spray or use a silicone muffin pan.
  2. In a medium bowl, whisk together eggs, milk, salt, and pepper.
  3. Evenly divide zucchini, bell pepper, and onion among muffin cups. Evenly pour egg mixture over top. Sprinkle evenly with cheese.
  4. Bake until eggs are puffy, firm, and slightly golden brown, 25 to 30 minutes.
  5. Serving size: 1 egg bite
