Aquafaba—the liquid drained off from a can of chickpeas—is the key to this frozen treat. It whips up to a texture similar to beaten egg whites, then is folded together with pureed peaches, sugar, and vanilla. The airy mixture is frozen solid but retains a fluffy texture similar to snow. Be patient when beating the aquafaba. If you’re using a powerful stand mixer, it might take only a few minutes, but if using a hand mixer, it’s likely to take 10 minutes or longer.

In a large bowl, beat aquafaba with whisk attachment of a mixer at high speed until stiff peaks form, 5 to 12 minutes.

Meanwhile, in a blender, puree peaches, powdered sugar, and vanilla on high speed until smooth, about 1 minute. Fold peach mixture into aquafaba mixture. Spoon into a 9 x 5-inch loaf pan. Cover and freeze until firm, at least 6 hours.
