Sometimes just a little bit of something sweet is all it takes to satisfy your sweet tooth or feel like you've ended your meal on the right note. Or maybe you're just looking for a little snack! These citrusy mini dessert treats fit the bill for all of those times. They are superquick to prepare, and look beautiful set out on a platter for a casual bite or to cap off a dinner party. If you don’t have a zester for the garnish, use a Microplane grater or the small holes on a box grater. Prep ahead You can make the filling up to 2 days ahead, but wait until close to serving time to toast the tart shells in the oven, and then fill the cooled shells right before you serve them so they stay crisp.

Ingredients

Mini phyllo shells

Reduced fat cream cheese (neufchâtel)

4 oz

Plain low fat Greek yogurt

3 Tbsp

Sugar

3 Tbsp

Fresh lime juice

1½ Tbsp, Key lime or regular (Persian) variety

Vanilla extract

¾ tsp

Lime

2 item(s), zest of 2 limes, removed in strips with citrus zester or grated

Sliced almonds

2 Tbsp

Instructions

  1. Preheat oven to 350°F. Place phyllo shells on small baking sheet and bake until crisp, about 5 minutes. Transfer shells to wire rack and let cool.
  2. Meanwhile, combine cream cheese and yogurt in medium bowl. Beat with electric mixer on medium speed until smooth. Beat in sugar, lime juice, vanilla, and half of lime zest. Spoon or pipe mixture into phyllo cups. Garnish each tart with lime zest and a few sliced almonds. Serve immediately.
