Foil packet side dishes are a perfect way to cook a whole meal on the grill. That's why you'll love this easy, delicious recipe. You'll also keep your kitchen cool with this potato, pepper, and onion trio. Simply toss all the ingredients together in a bowl, then divide them among the foil packets. Grill the packets until the potatoes are tender, which should take about 20 minutes. It doesn't get much easier than that! Serve them alongside any grilled meat to complete the meal. Also keep in mind that fresh rosemary imparts a strong flavor to this recipe. If you’re not a big rosemary fan, you should cut back on the amount.

Ingredients

Uncooked red potato

1 pound(s), scrubbed and thinly sliced (about 3 cups)

Yellow bell pepper

1 medium, cut into thin strips (about 2 cups)

Red onion

1 medium, thinly sliced (about 1 cup)

Olive oil

1 Tbsp

Garlic

2 clove(s), minced

Rosemary

1 Tbsp, fresh, chopped, or less to taste

Table salt

½ tsp

Black pepper

½ tsp, freshly ground

Instructions

  1. Preheat grill. Tear off four 12-inch long pieces of aluminum foil.
  2. In a large bowl, combine all ingredients until mixed and coated. Spread about 1 1/2 cups of vegetable mixture in a fairly even layer near one end of each piece of foil. Fold foil over to form packets; fold edges in to form a tight seal.
  3. Grill packets, turning a few times, until potatoes and vegetables are tender, about 20 to 25 minutes. Yields 1 packet per serving.
