This beautiful sweet dessert comes together in just half an hour and is impressive enough to serve as the finale for any celebration or dinner party. We love the color pop of the deep orange apricots, crimson cherries, and bright green pistachios, but you can also use almonds or hazelnuts if you like. Simply let the apricots, cherries, orange juice, water, and sugar cook down until softened and syrupy, which takes about 20 minutes. Dollop with yogurt that's flavored with cinnamon and sugar as well as chopped pistachios, and your dessert is ready to go. It really doesn't get much easier than that.

Dried apricot halves

Plain fat free Greek yogurt

Ground cinnamon

¼ oz, unsalted, chopped (2 tablespoons)

Instructions

  1. Combine the apricots, cherries, orange juice, water, and 3 tablespoons of the sugar in a medium saucepan; bring to a boil over medium-high heat. Reduce the heat and simmer, covered, until the fruit is softened, about 20 minutes. Transfer the fruit mixture to a large bowl and let stand until cool.
  2. Mix together the yogurt, cinnamon, and the remaining 1 tablespoon sugar in a small bowl.
  3. Place a generous 1/3 cup of the fruit mixture in each of 4 dessert dishes. Top each with 2 tablespoons yogurt mixture and 1 1/2 teaspoons pistachios. Yields 1 dessert per serving.
