Turkish-Style Glazed Apricots and Cherries

We love the color pop of the deep orange apricots, crimson cherries, and bright green pistachios, but you can also use almonds or hazelnuts if you like.
Ingredients

dried apricot halves

1 cup(s), California variety

dried cherries

¼ cup(s)

orange juice

fl oz

water

½ cup(s)

sugar

4 Tbsp

plain fat free Greek yogurt

½ cup(s)

ground cinnamon

tsp

shelled pistachio nuts

¼ oz, unsalted, chopped (2 tablespoons)

Instructions

  1. Combine the apricots, cherries, orange juice, water, and 3 tablespoons of the sugar in a medium saucepan; bring to a boil over medium-high heat. Reduce the heat and simmer, covered, until the fruit is softened, about 20 minutes. Transfer the fruit mixture to a large bowl and let stand until cool.
  2. Mix together the yogurt, cinnamon, and the remaining 1 tablespoon sugar in a small bowl.
  3. Place a generous 1/3 cup of the fruit mixture in each of 4 dessert dishes. Top each with 2 tablespoons yogurt mixture and 1 1/2 teaspoons pistachios. Yields 1 dessert per serving.
