Ingredients

reduced calorie mayonnaise

1½ Tbsp

prepared wasabi paste

1 tsp

mixed grain bread

4 oz, 4 (1-ounce) slices

fresh baby spinach

½ cup(s), loosely packed

plum tomato(es)

1 medium, sliced

avocado

½ medium, ripe, thinly sliced

cooking spray

1 spray(s)

deli style low sodium turkey breast

6 oz, sliced

low-fat Swiss cheese

2 oz, sliced

Instructions

  1. Stir together mayonnaise and wasabi paste in cup. Spread one side of each slice of bread with wasabi sauce. Layer 2 slices of bread evenly with spinach, tomato, avocado, turkey, and Swiss cheese. Top with remaining slices of bread.
  2. Spray ridged grill pan with nonstick spray and set over medium-high heat. Place sandwiches in pan and top with another heavy skillet to weight them. Cook until cheese is melted and bread is golden brown and crispy, about 2 minutes on each side (or grill sandwiches in panini press.)
  3. Per serving: 1 sandwich

Notes

You can also use 1 1/2 tablespoons wasabi sauce instead of mixing together the wasabi paste and mayonnaise.
