Turkey Stack-Ups with Sweet Curry Mustard Spread

This sweet curry mixture gives the sandwiches a gourmet flair, while sunflower seeds offer a nutty crunch.
light mayonnaise3 Tbsp
mustard1 ½ Tbsp
honey1 ½ Tbsp
curry powder½ tsp
whole wheat bread8 slice(s), toasted (1 ounce each)
cooked turkey breast with skin8 oz, thinly sliced
uncooked red onion(s)1 small, thinly sliced
green pepper(s)½ medium, thinly sliced
alfalfa sprouts¾ cup(s)
sunflower seeds2 Tbsp
- Combine first 4 ingredients in a small bowl, stirring with a whisk. Spread mayonnaise mixture evenly over 1 side of each slice of toast.
- Place 1 slice on each of 4 plates, coated side up. Top each with equal amounts of turkey, onion, bell pepper and sprouts. Sprinkle 11/2 teaspoons sunflower kernels over each sandwich. Top with remaining slices of toast, coated side down. Yield: 4 servings (serving size: 1 sandwich).
