This sweet curry mustard spread is so easy to assemble and so great on sandwiches, you might want to make an extra batch to keep in the refrigerator to use on toast and sandwiches all week long. The mix of sweet honey, spicy curry powder, sharp mustard, and creamy mayo is unbeatable, and is a perfect match with roasted turkey. The sliced bell pepper, red onion, and sprouts add great color and texture to the sandwich, and sunflower seeds deliver a bonus round of crunch together with nutty flavor. Ingredients

Reduced calorie mayonnaise

3 Tbsp

Mustard

Honey

1½ Tbsp

Curry powder

½ tsp

Whole wheat bread

8 slice(s), toasted (1 ounce each)

Cooked turkey breast with skin

8 oz, thinly sliced

Red onion

1 small, thinly sliced

Green bell pepper

½ medium, thinly sliced

Alfalfa sprouts

¾ cup(s)

Sunflower seeds

Instructions

  1. Combine first 4 ingredients in a small bowl, stirring with a whisk. Spread mayonnaise mixture evenly over 1 side of each slice of toast.
  2. Place 1 slice on each of 4 plates, coated side up. Top each with equal amounts of turkey, onion, bell pepper and sprouts. Sprinkle 11⁄2 teaspoons sunflower kernels over each sandwich. Top with remaining slices of toast, coated side down. Yield: 4 servings (serving size: 1 sandwich).
