Serve this meatloaf with cauliflower mash and steamed peas and carrots for a delicious, veggie-packed meal. Though this recipe calls for Italian seasoning, swap in any seasoning you prefer. You can also use seasoned breadcrumbs for added flavor. For easy portion control, divide the meatloaf mixture between 8 muffin cups instead of using a loaf pan.

Cooking spray

Uncooked 93% lean ground turkey

2 pound(s)

Dried plain breadcrumbs

½ cup(s)

Shredded carrots

½ cup(s)

Green bell pepper

½ cup(s), chopped, diced

Onion

½ cup(s), chopped, diced

Garlic clove

8 clove(s), minced

Tomato paste

1 Tbsp

Worcestershire sauce

2 Tbsp

Egg

2 large egg(s)

Italian seasoning

1 Tbsp

Kosher salt

2 tsp

Black pepper

½ tsp

Ketchup

Instructions

  1. Preheat oven to 350°F. Coat a 9- X 5-inch loaf pan with nonstick spray.
  2. In a large bowl, combine all ingredients, except ketchup. Mix until combined but do not overmix. Transfer mixture to prepared pan. Bake for 30 minutes.
  3. Spread ketchup over top of meatloaf. Return to oven and bake until cooked through and an internal temperature of 160°F, about 30 to 45 minutes.
  4. Rest for 10 minutes before slicing into 8 pieces with a serrated knife.
  5. Serving size: 1 slice
