Turkey, Manchego, and Fresh Peach Sandwiches

To make this elegant savory-sweet sandwich, we borrowed a classic technique: sugaring peach slices with a pinch of salt.

sheep milk2 oz, cheese, Manchego variety, thinly sliced
- Toss together the peaches, sugar, and salt in a colander. Place in the sink and let stand until the peach juices begin to drip, about 20 minutes. Briefly rinse the peaches under cold running water, then pat dry with paper towels.
- Lay 4 slices of the bread on a work surface. Evenly layer the turkey, peaches, and manchego on the bread and top with the remaining slices of bread. Cut each sandwich in half. Serve at once or wrap each sandwich in plastic wrap and refrigerate up to 1 day. Yields 1 sandwich per serving.
