Here's a slimmed-down version of a classic American sandwich: the bacon, lettuce and tomato. Make it your own by using your favorite light bread, or regular bread that's sliced thin. When it's tomato season, buy the most colorful ones you can find. Both yellow and red tomato slices would be super cute and tasty. Pair this with a bowl of vegetable soup for a complete meal.

Ingredients

Uncooked turkey bacon

Light mayonnaise

3 Tbsp

Lemon zest

1 tsp, finely grated

Reduced-calorie whole wheat bread

Tomato

1 medium, thinly sliced

Boston lettuce

4 leaf/leaves, or butter lettuce

Black pepper

6 leaf/leaves, optional

Instructions

  1. Spray a large heavy skillet with nonstick spray and set over medium-high heat. Add bacon and cook until browned, 2−3 minutes. Transfer to a paper towel-lined plate; keep warm.
  2. Stir mayonnaise and lemon zest together in a small cup.
  3. Spread lemon mayonnaise evenly over one side of each bread slice. Top 2 slices evenly with bacon, tomato, and lettuce. Sprinkle with pepper and top with basil, if using; cover sandwiches with remaining 2 slices bread.
  4. Serving size: 1 sandwich
