Add some extra protein to this salad with some chopped hard-cooked egg. Shredded carrots would add a lovely pop of color.

Ingredients

Apple cider vinegar

1½ Tbsp, or raspberry vinegar

Olive oil

2 tsp

Ground coriander

½ tsp

Table salt

¼ tsp

Black pepper

Romaine lettuce

4 cup(s), roughly chopped

Cooked turkey breast without skin

12 oz, thinly sliced

Celery

2 rib(s), medium, chopped

Apple

1 medium, cored and thinly sliced

Golden seedless raisins

½ cup(s), chopped

Instructions

  1. In a small bowl, whisk the vinegar, oil, coriander, salt, and pepper; set aside.
  2. Place the lettuce in a serving bowl; top with the turkey, celery, apple, and raisins. Toss with the dressing; serve.
  3. Serving size: about 2 ¼ cups
