Tropical oats with chia seeds

Grab a spoon and supercharge your morning with this sunny spin on oatmeal. First, quick-cooking oats are simmered in coconut water, which also plumps the chia seeds for a fun tapioca-like effect. A sweet topping of coconut flakes, fresh kiwi, and fresh pineapple completes the tropical theme.


Ingredients
Coconut water
1 cup(s)
Uncooked quick oats
½ cup(s)
Dried chia seeds
1 Tbsp
Kiwifruit
2 medium, peeled and finely chopped
Pineapple
¾ cup(s), finely chopped
Sweetened coconut flakes
2 Tbsp, toasted
Instructions

In a small saucepan, bring the coconut water to a boil over high heat. Add the oats and chia seeds. Reduce heat and simmer until the oats are cooked through and thickened, about 5 minutes, stirring occasionally.

Divide the oats between 2 bowls. Top each bowl with the kiwis, pineapple, and coconut flakes.
