When your oatmeal needs a makeover, try this tropical-inspired recipe. It's full of delicious goodness from fresh, juicy fruit, toasted coconut, and chia seeds. Chia seeds are loaded with protein and fiber and can absorb up to nine times their weight in liquid. They develop a thick, viscous texture when soaked, somewhat like that of tapioca. If you don't have pineapple or kiwi, consider blueberries and chopped strawberries instead.

Ingredients

coconut water

8 fl oz

uncooked quick oats

½ cup(s)

dried chia seeds

1 Tbsp

kiwifruit(s)

2 medium, peeled and diced

pineapple

¾ cup(s), diced

sweetened coconut flakes

2 Tbsp, toasted

Instructions

  1. Bring coconut water to boil in small saucepan. Add oats and chia seeds. Lower heat and simmer, stirring occasionally, until oats are cooked through and thickened, about 5 minutes.
  2. Spoon oats into 2 bowls. Top with kiwi, pineapple, and coconut chips.
  3. Serving size: 1/2 cup oat mixture, 3/4 cup fruit, and 1 tbsp coconut
