Ingredients

Mango

1 large, peeled, pitted, and cubed

Papaya

1 cup(s), cubed

Pineapple

1 cup(s), cubed

Kiwifruit

2 medium, peeled and cubed

Peppermint leaves

2 Tbsp, chopped fresh plus sprigs for garnish

Fresh lime juice

1 Tbsp

Sugar

1 tsp

Plain fat free Greek yogurt

3 cup(s)

Unsweetened coconut flakes

4 Tbsp, toasted

Instructions

  1. To make salsa, stir mango, papaya, pineapple, kiwifruit, mint, lime juice, and sugar together in large bowl.
  2. Spoon 1/2 cup of salsa into each of 4 parfait glasses. Top each with about 1/3 cup of yogurt. Repeat layering with remaining fruit and yogurt. Sprinkle parfaits evenly with coconut, garnish with mint sprigs (if using), and serve at once.
  3. Per serving (1 parfait)

Notes

The salsa will keep in a covered container in the refrigerator up to 2 days.
