If you prefer, puree the fruit mixture up to 2 hours ahead (the fruit juices will prevent the banana from browning).

Ingredients

Banana

2 medium, ripe, cut into 1⁄2-inch chunks

Papaya

2 cup(s), (1⁄2-inch) diced

Orange juice

¼ cup(s)

Powdered sugar (confectioner's)

2 Tbsp

Fresh lime juice

2 tsp

Fat free whipped topping

1 cup(s)

Sweetened coconut flakes

2 Tbsp, toasted

Lime zest

2 Tbsp, (about 2 large limes)

Instructions

  1. Put the bananas, papaya, orange juice, confectioners’ sugar, and lime juice in a food processor and puree. Scrape into a medium bowl. With a rubber spatula, gently fold in the whipped topping until blended. Spoon into wineglasses or dessert dishes. Sprinkle with the toasted coconut and lime zest; serve at once. Yields 3/4 cup per serving.
