Tropical Chicken Salad with Orange Vinaigrette

Unsweetened orange juice

Rice wine vinegar
1 Tbsp
Olive oil
2 tsp
Table salt
¼ tsp
Black pepper
¼ tsp, freshly ground
Fresh mixed greens

Cooked skinless boneless chicken breast
5 oz, thinly sliced
Pineapple
¾ cup(s), fresh, cut into chunks
Mango
¾ cup(s), fresh, cut into chunks
Cucumber

Instructions

In a large bowl, stir together orange juice, vinegar, oil, salt and pepper until blended.

Add salad greens, chicken, pineapple, mango, cucumber, mint and onion; toss to mix and coat. Serve immediately.
