Ingredients

Olive oil

Uncooked plantain

20 oz, peeled and cut on a diagonal into 1⁄2-inch slices

Table salt

1 tsp

Instructions

  1. Heat the oil in a large nonstick skillet over medium-high heat. Cook the plantains, in batches, until tender and golden brown, about 5 minutes on each side. Transfer the plantain slices to a double thickness of paper towels to drain. With the bottom of a heavy plate or saucepan, gently press down on the slices, one at a time, to flatten to 1/4-inch thickness.
  2. Spray the same skillet with olive oil nonstick spray and set over medium-high heat. Add the plantain slices, in batches, and cook until nicely browned, about 1 minute on each side. Sprinkle with the salt while hot. Yields about 5 pieces per serving.

Notes

Here’s how to peel a plantain: cut off both ends, then cut it crosswise in half. With a small knife, slit the skin along its ridges, cutting down to the flesh, then peel off the skin.You need 2 (10-ounce) plantains.
