Tomato and nectarine salad with pumpkin seeds

While we use nectarines, feel free to substitute peaches or plums, or use a combination of stone fruit like mangoes, apricots, and cherries.


Ingredients
Tomato
1 pound(s), any kind, cored, sliced or chopped
Nectarine
1 pound(s), pitted, cut into thick wedges
Extra virgin olive oil
2 Tbsp
Fresh lime juice
2 Tbsp
Kosher salt
½ tsp, or to taste
Arugula
5 cup(s), baby variety
Scallions
4 medium, ends trimmed, thinly sliced
Oil roasted salted pumpkin seeds (pepitas)

Instructions

Place tomatoes and nectarines in a large mixing bowl; drizzle with oil and lime juice. Sprinkle with salt; gently combine with your hands.

Place arugula on a large serving platter; spoon tomato mixture over top. Sprinkle with scallions and pumpkin seeds; serve immediately.
