Tomato, Bacon and Fresh Herb Sauté

A wonderful way to highlight the sweet flavor of fresh summer tomatoes. Serve as a side dish or pasta sauce.


Ingredients
Pancetta
1½ oz, diced
Garlic
2 clove(s), finely chopped
Grape tomatoes
4 cup(s), halved
Kosher salt
¾ tsp
Sugar
¼ tsp
Black pepper
⅛ tsp, freshly ground, or to taste
Fresh basil
⅓ cup(s), fresh, chopped
Fresh parsley
1 Tbsp, finely chopped

Heat a large nonstick skillet over medium heat. Add pancetta and cook, until crisp, stirring frequently, about 6 minutes. Add garlic; cook, stirring, until fragrant, about 30 seconds to 1 minute.

Increase heat to medium-high and add tomatoes, salt, sugar and pepper; cook until just beginning to soften, stirring occasionally, about 8 minutes. Remove from heat; stir in basil and parsley. Yields about 1/2 cup per serving.
