Serve the perfect appetizer for your next soiree. Rub the slices of bread with the cut side of garlic to add flavor without adding butter. arugula

grated Parmesan cheese

balsamic vinegar

¼ tsp, freshly ground

Italian bread

5 oz, four 1.25 oz pieces about 3⁄4-inch-thick each

garlic clove(s)

1 medium clove(s), halved

Instructions

  1. Combine first 7 ingredients. Let stand 20 minutes.
  2. Preheat broiler or prepare grill.
  3. Rub bread with cut side of garlic clove. Place bread slices on a baking sheet or grill rack; cook 2 to 3 minutes on each side or until lightly browned.
  4. Top bread slices with tomato mixture. Serve immediately. Yields 1 slice of bread and about 1/2 cup of tomato mixture per serving.
