Tomato and Arugula Crostini

Use a high quality Parmesan cheese to maximize your flavor for the least possible calories. Parmigiano Reggiano has a nice, nutty taste.

arugula2 cup(s), fresh, chopped
grated Parmesan cheese½ cup(s), fresh
olive oil1 Tbsp, extra-virgin
balsamic vinegar2 tsp, white-variety
kosher salt¼ tsp
black pepper¼ tsp, freshly ground
Italian bread5 oz, four 1.25 oz pieces about 3/4-inch-thick each
garlic clove(s)1 clove(s), medium, halved
- Combine first 7 ingredients. Let stand 20 minutes.
- Preheat broiler or prepare grill.
- Rub bread with cut side of garlic clove. Place bread slices on a baking sheet or grill rack; cook 2 to 3 minutes on each side or until lightly browned.
- Top bread slices with tomato mixture. Serve immediately. Yields 1 slice of bread and about 1/2 cup of tomato mixture per serving.
