Serve the perfect appetizer for your next soiree. Rub the slices of bread with the cut side of garlic to add flavor without adding butter. Plum tomatoes will add juicy freshness, while arugula will add texture. Our pro tip: Use a high quality Parmesan cheese to maximize your flavor. Parmigiano Reggiano has a nice, nutty taste. Ingredients

Plum tomato

4 medium, seeded and chopped

Arugula

2 cup(s), fresh, chopped

Grated Parmesan cheese

½ cup(s), fresh

Olive oil

1 Tbsp, extra-virgin

Balsamic vinegar

2 tsp, white-variety

Kosher salt

¼ tsp

Black pepper

¼ tsp, freshly ground

Italian bread

5 oz, four 1.25 oz pieces about 3⁄4-inch-thick each

Garlic

1 clove(s), halved

Instructions

  1. Combine first 7 ingredients. Let stand 20 minutes.
  2. Preheat broiler or prepare grill.
  3. Rub bread with cut side of garlic clove. Place bread slices on a baking sheet or grill rack; cook 2 to 3 minutes on each side or until lightly browned.
  4. Top bread slices with tomato mixture. Serve immediately. Yields 1 slice of bread and about 1/2 cup of tomato mixture per serving.
