Tomato and arugula crostini
4 medium, seeded and chopped
2 cup(s), fresh, chopped
Grated Parmesan cheese
½ cup(s), fresh
1 Tbsp, extra-virgin
2 tsp, white-variety
¼ tsp, freshly ground
5 oz, four 1.25 oz pieces about 3⁄4-inch-thick each
1 medium clove(s), halved
- Combine first 7 ingredients. Let stand 20 minutes.
- Preheat broiler or prepare grill.
- Rub bread with cut side of garlic clove. Place bread slices on a baking sheet or grill rack; cook 2 to 3 minutes on each side or until lightly browned.
- Top bread slices with tomato mixture. Serve immediately. Yields 1 slice of bread and about 1/2 cup of tomato mixture per serving.
