Three simple ingredients are all it takes to set you up for a multitude of healthy meals; simply batch cook the chicken and get in easy protein all week. Use the saucy shredded chicken in bowls, tacos, fajitas, sandwiches, or pizzas. You can also freeze portions of the cooked chicken for easy meal prep later on.

Fajita seasoning mix

Uncooked skinless boneless chicken breast

Instructions

In a slow cooker, stir together the salsa and seasoning mix. Add the chicken and turn over to coat. Cover and cook until the chicken is tender, on High for 3 ½ to 4 hours or Low for 6 to 7 hours.

Remove the chicken from the cooker and place on a plate or cutting board. Shred the chicken with 2 forks and return to the cooker, tossing to coat with the sauce.
