Shrimp kebabs with corn and grilled peppers

These two-ingredient kebabs also make a great starter—just divide the shrimp between 8 smaller skewers for appetizer portions.

Instructions

Off heat, coat an outdoor grill rack with cooking spray. Prepare grill to medium-high heat.

Divide shrimp among 4 long metal skewers. Coat with cooking spray and sprinkle with 1 ½ tsp seasoning salt; set aside.

Place peppers in a grill basket and coat with cooking spray. Sprinkle with remaining 1 ½ tsp seasoning salt. Grill peppers, tossing once or twice, until peppers are browned in spots, 8 to 10 minutes. After peppers have cooked for a few minutes, place shrimp on grill. Grill, turning once, until shrimp are opaque and slightly firm, 2 to 3 minutes per side.

Serve the shrimp kebabs garnished with the scallions alongside the peppers and corn.
