These two-ingredient kebabs also make a great starter—just divide the shrimp between 8 smaller skewers for appetizer portions.

Ingredients

Cooking spray

6 spray(s)

Uncooked shrimp

1 pound(s), peeled, deveined, large (about 24)

Seasoning salt

1 Tbsp, divided (or to taste)

Sweet mini peppers

20 item(s), red, orange, and yellow

Scallions

2 small, thinly sliced

Corn on the cob

4 ear(s), medium, grilled, microwaved, or boiled

Instructions

  1. Off heat, coat an outdoor grill rack with cooking spray. Prepare grill to medium-high heat.
  2. Divide shrimp among 4 long metal skewers. Coat with cooking spray and sprinkle with 1 ½ tsp seasoning salt; set aside.
  3. Place peppers in a grill basket and coat with cooking spray. Sprinkle with remaining 1 ½ tsp seasoning salt. Grill peppers, tossing once or twice, until peppers are browned in spots, 8 to 10 minutes. After peppers have cooked for a few minutes, place shrimp on grill. Grill, turning once, until shrimp are opaque and slightly firm, 2 to 3 minutes per side.
  4. Serve the shrimp kebabs garnished with the scallions alongside the peppers and corn.
  5. Serving size: 1 kebab, 1 ear of corn, and 5 peppers

Notes

Cook the corn however you prefer such as grilled, boiled, or microwaved. When it's super sweet and in season, corn is even delicious raw!
