Watercress, dill, and chives give this dressing its herbaceous taste and green hue, while the cottage cheese, milk, and mayonnaise contribute to its creamy texture.

Ingredients

fat free cottage cheese

½ cup(s)

fresh watercress

¼ cup(s), or flat-leaf parsley

fat free skim milk

3 Tbsp

fresh lemon juice

2 Tbsp

dill

1 Tbsp, fresh, chopped

chives

1 Tbsp, fresh, minced

fat free mayonnaise

1 Tbsp

garlic clove(s)

1 medium clove(s), minced (or less to taste)

Instructions

  1. Place all of the ingredients in a blender or mini–food processor and pulse until smooth. Thin with 1 or 2 tablespoons of water if necessary. Cover and refrigerate at least 1⁄2 hour or up to 2 days to allow the flavors to blend. Yields 2 tablespoons per serving.

Toss this dressing with your favorite greens or serve as a dip for shrimp.
