Ingredients

reduced calorie mayonnaise

¼ cup(s)

unsweetened lime juice

¼ fl oz

cilantro

¼ cup(s), fresh chopped

fish sauce

1 Tbsp, Thai variety

black pepper

¼ tsp

cooked shrimp

1 pound(s), frozen, thawed and chopped

uncooked bell pepper(s)

½ item(s), small, chopped

uncooked red onion(s)

½ small, chopped

whole wheat pita(s)

4 small, (7-inch each)

lettuce

4 leaf/leaves, large, green variety

Instructions

  1. Stir together the mayonnaise, lime juice, cilantro, fish sauce, and black pepper in a large bowl. Add the shrimp, bell pepper, and onion to the mayonnaise mixture and toss to coat.
  2. Cut off the top third of each pita and discard. Line each pita with a lettuce leaf and fill evenly with the shrimp salad. Yields 1 pita per serving.
